Pineapple, Lemon, Green Tea Gelatin Recipe & Gelatin’s Benefits

This is a gelatin snack I made for something to chew on during bowel cleansing the day before my colonoscopy this year. I use a grassfed Kosher beef gelatin, Great Lakes Gelatin (available on Amazon). They have a few types and the one you are looking for to make the firm gelatin snack is the red container. Whereas, the green container (the hydrolysate) will dissolve in liquids and not harden, so it can be used in water, shakes, drinks and smoothies as a healthy superfood boost, adding a little protein as well. It’s important to get gelatin that is from grass fed/ pastured animals in order to avoid contamination with hormones, pesticides and heavy metals.

Grain Free Tortilla Crepe Wrap Recipe & Meal Ideas

I’ve tried quite a few grain free tortilla/wrap/crepe recipes, which have given me a good lesson in how to develop my own. This one is great tasting and holds up when trying to eat as a wrap with your hands, but also works just fine with fork and knife. The recipe can be tailored for sweet or savory dishes by making any kind of tweaks you’d like, whether that would be to add vanilla extract, stevia, chives or some minced herbs into the batter.

Basic Crepe Recipe:

Makes 1, 9-inch round crepe

Wet Ingredients:

  • 2 large eggs
  • 1/2 tsp Extra Virgin Olive Oil (EVOO)
  • 1/2 tsp Apple Cider Vinegar (ACV)

Dry Ingredients:

  • 2 TB Arrowroot Powder (Tapioca Flour ok too)
  • 1/2 TB Coconut Flour
  • 1/8 tsp Baking Powder
  • 1/8 tsp Baking Soda
  • Dash of Sea Salt

For the Pan:

  • 1 tsp-1/2 TB Butter


Kale Salad with Raisins, Carrots & Red Cabbage

I have a love/hate relationship with kale, as I’m sure many others do. I know it’s good for me, but sometimes it’s just hard to get down. Sometimes, it’s just easier to get my kale in by cooking it. It’s so thick and dense; I feel my body having a hard time digesting it sometimes.

That said, I have had many raw kale salads, typically when dining in natural food markets (eg Whole Foods, New Leaf, etc.), that I’ve really enjoyed. After many years of knowing the magical nutrient powerhouse that is kale, I am happy to report: there are several ways that I really enjoy eating it; one of which is this salad.

There are two main factors in creating successful (raw) kale salad consumption for me:


Raspberry Delight Smoothie & Coconut Milk Selection

I threw this together recently while working on limiting my consumption of the holiday related decadent dessert sweet treats. It’s chock full of healthy fat from coconut milk and antioxidants from the sweet spices and fruit. The flavor just hit the spot for me and I keep making it several times per week as a dessert or snack. I use my Ninja blender with the single serve attachment to make it, but you can easily multiply the recipe by however many servings you need.


Garlic Lover’s Hummus


Hummus is definitely among the foods I sometimes miss. It’s also among my occasional cheats when I’m out in social situations where it’s the least “bad for me” food to eat a little of on the hors d’oeuvres table. I love dipping vegetable sticks into guac and hummus; who doesn’t?! I was pretty excited when I found out you can make some Paleo friendly hummus using cauliflower as the base rather than garbanzo beans/chick peas. My recipe is garlic and tahini heavy, which is how I love it!

Lemon Mug Cake

(null)This recipe has been inspired by another one, so I am giving credit where it is due to Laura Epps’ Paleo in Comparison for my inspiration. I made a few tweaks based on my ingredients and taste preferences. It’s a deliciously moist cake; yum! Here is the original recipe: Coconut Lime Mug Cake.

Not a usual thing for me, but I had this for lunch the other day with some veggies (Carrot sticks and Cauliflower hummus). I was craving carbs and found this recipe, which is compliant with my current sugar detox plan. It includes real food ingredients, feels like decadence, yet isn’t an insane splurge, so it was perfect! (more…)

Sweet Potato Apple Crunch

IMG_2361.JPGYum! This is a dessert I default to a lot. This month I’ve been committed to kicking the sugar habit, aka forcing sugar to release its strong hold on me, so I’ve adapted my dessert to comply with the sugar detox plan.


Carrot & Apple Salad


This is so simple it’s hard to believe it could taste so good!! I tried this at Trader Joe’s one day, where I was so thrilled they were serving something I would be able to sample. They provided the recipe, so I was able to enjoy the amazing flavors again. (more…)

Roasted Chicken


This is one of the most convenient and versatile proteins to have on hand, one of the easiest things to cook, and, yet, I have just recently begun making roasted chicken. Shame on me! It took me a while to try because I was intimidated and there was still some remnant of my past, college-aged, disgust with handling raw chicken. I think this is common, or I’ve at least known a few people who say the same thing. (more…)

Sweet Crepes – Banana Chocolate Chip Nut Butter Crepe


There are many recipes for Paleo wraps, tortillas, crepes, whatever you want to call them. This week, I made the Wrap recipe from Against All Grain Meals Made Simple. I like these because unlike my own, which I adopted from a Stupid Easy Paleo recipe for Paleo Tortillas they are a little more fluid and easier to spread thinly on your pan. The recipe said a yield of 12 pcs (8 inch wraps), and the best I could do was 11 with 2 of them quite smaller than the others. In any case, I used store bought almond milk and the one I had in the home was the unsweetened vanilla, so these go very well with sweet applications. They are actually ok with what I made them for, which is the Breakfast Burrito recipe from the same book; ok, but definitely a lil off due to the slight hint of vanilla. (more…)
