Sweet Potato Apple Crunch

IMG_2361.JPGYum! This is a dessert I default to a lot. This month I’ve been committed to kicking the sugar habit, aka forcing sugar to release its strong hold on me, so I’ve adapted my dessert to comply with the sugar detox plan.

This is one of many single serve desserts that I throw together in just a few minutes. I like it that way, then I can’t overdo it with my consumption. Yep, I love dessert!! Haha.

Ingredients:
1/2 c Sweet Potato (baked, boiled, whatever you have)
1/3 c Cooked Apple Slices or pieces
1/2 TB Coconut Oil or Ghee
2 TB Raw Pecan Pieces
1/2 tsp Chia Seeds
Powdered Cinnamon, to taste
1-2 drops of Stevia liquid, optional

Method:
*The rapid prep for this implies you already have cooked sweet potatoes and cooked/stewed apples available to you.

  1. Put the sweet potatoes, apples, coconut oil and sprinkle cinnamon to your liking into a small dessert bowl and reheat (stovetop or microwave, wherever you prefer). Note: If using stevia: You can put the drop of stevia in before heating, so it melts into the coconut oil and disperses nicely later when you stir it all.
  2. Top with the pecan pieces and chia seeds.
  3. Stir to combine. End result looks like a mush, but tastes great!

Note: Add 1/2 TB maple syrup when you want it sweetened and don’t use the Stevia.
