Grain Free Tortilla Crepe Wrap Recipe & Meal Ideas
I’ve tried quite a few grain free tortilla/wrap/crepe recipes, which have given me a good lesson in how to develop my own. This one is great tasting and holds up when trying to eat as a wrap with your hands, but also works just fine with fork and knife. The recipe can be tailored for sweet or savory dishes by making any kind of tweaks you’d like, whether that would be to add vanilla extract, stevia, chives or some minced herbs into the batter.
Basic Crepe Recipe:
Makes 1, 9-inch round crepe
Wet Ingredients:
- 2 large eggs
- 1/2 tsp Extra Virgin Olive Oil (EVOO)
- 1/2 tsp Apple Cider Vinegar (ACV)
Dry Ingredients:
- 2 TB Arrowroot Powder (Tapioca Flour ok too)
- 1/2 TB Coconut Flour
- 1/8 tsp Baking Powder
- 1/8 tsp Baking Soda
- Dash of Sea Salt
For the Pan:
- 1 tsp-1/2 TB Butter
Kale Salad with Raisins, Carrots & Red Cabbage
I have a love/hate relationship with kale, as I’m sure many others do. I know it’s good for me, but sometimes it’s just hard to get down. Sometimes, it’s just easier to get my kale in by cooking it. It’s so thick and dense; I feel my body having a hard time digesting it sometimes.
That said, I have had many raw kale salads, typically when dining in natural food markets (eg Whole Foods, New Leaf, etc.), that I’ve really enjoyed. After many years of knowing the magical nutrient powerhouse that is kale, I am happy to report: there are several ways that I really enjoy eating it; one of which is this salad.
There are two main factors in creating successful (raw) kale salad consumption for me:
Lemon Mug Cake
This recipe has been inspired by another one, so I am giving credit where it is due to Laura Epps’ Paleo in Comparison for my inspiration. I made a few tweaks based on my ingredients and taste preferences. It’s a deliciously moist cake; yum! Here is the original recipe: Coconut Lime Mug Cake.
Not a usual thing for me, but I had this for lunch the other day with some veggies (Carrot sticks and Cauliflower hummus). I was craving carbs and found this recipe, which is compliant with my current sugar detox plan. It includes real food ingredients, feels like decadence, yet isn’t an insane splurge, so it was perfect! (more…)
